Pay attention you purist. Can Salem is one of the many bakeries in the island, but its baker isn’t a usual baker. According to their own definition, he is a trademark baker. His ensaïmades, it’s true, are the best – and the most expensive– in Mallorca, but his obsession with the product reaches the point of interrogating the consumer: “this ensaïmada you’re ordering, when are you going to eat it?” that’s a question he usually asks the buyer. If the answer you give him is, let’s say, maybe in two days, when you get back to Barcelona, it’s likely he won’t want to sell it to you. In two days it won’t be worth anything, he’ll say. If you’re going to eat it that same afternoon you’re buying it, he won’t wrap it so the heat won’t make it mushy, and if it’s going to be for the evening he’ll tell you what you ought to do for it to be at its best. A purist. A real artist.

Atenció, purista. El forn de Can Salem és un dels molts forns de l’illa, però el seu forner no és un forner habitual. Segons la pròpia definició, ell és un forner d’autor. Les seves ensaïmades, és cert, són de les millors –i més cares- de Mallorca, però la seva obsessió pel producte arriba fins al punt de fer-li una avaluació al consumidor: aquesta ensaïmada que m’encarregues, quan te l’has de menjar? És una pregunta que sol fer al comprador. Si la resposta que li dones és, no ho sé, potser d’aquí a dos dies, en arribar a Barcelona, el més probable és que no te la vulgui vendre. D’aquí a dos dies no valdrà res, et dirà. Si te l’has de menjar el migdia que te l’emportes, ni te l’embolicarà per a què l’escalfor no l’estovi, i si és de cara al vespre, et dirà com ho has de fer per a què t’arribi amb les millors condicions. Un purista, vaja. Un artista de debò.
