frit mLet’s talk about frit. Exquisit and delicious dish in which the fried ingredients are mixed in with the scent from spring field herbs, with fennel imposing itself triumphantly. The firt’s chips are a culinary summit that hasn’t been bettered. The cases in which people order frit only to eat the chips and leave the rest of the ingredients are numerous. So what’s the problem with these ingredients? That they are all the pork’s and the lamb’s guts, depending on the type: heart, lungs, kidneys, everything is thrown into the frit, fried with the season’s vegetables, a lot of potatoes, seasoned with herbs and served. Currently, sophisticated society has ended up creating a less stressful version of the dish: the sea frit, made with squid, prawns and cuttlefish. It’s also good, and the chips taste is the same. But us who love frit are uncompromising: good frit is made of meat. And if you don’t like it, leave the chips too.

 

Parlem del frit. Menja exquisida i deliciosa en què la fritura dels ingredients incorpora tots els aromes de les herbes del camp de la primavera, amb un fonoll que s’imposa triomfalment. Les patates fregides del frit són un cim culinari no superat. Són nombrosos els casos de gent que demana frit només per menjar-se’n les patates i deixar la resta d’ingredients. Que quin és el problema d’aquests ingredients? Que són totes les visceres del xai o del porc, segons les variants: cor, pulmons, ronyons, tot s’aboca al frit, es fregeix amb verdures del temps, s’hi posen força patates, s’aromatitza amb les herbes i es serveix. Actualment, la societat sofisticada ha acabat produint una variant del plat menys estressant: el frit mariner, fet amb calamar, gambes i sípies. També és bo, el gust de les patates és el mateix. Però els que estimem el frit som intransigents: el bon frit és el de carn. I si no t’agrada, les patates les deixes igualment.
